How has the nominee implemented sustainable business practices in his or her business or organization?

Bob has been instrumental for Bon Appetit to maintain it`s sustainable culture - he has developed local food buying with over 35 local farms - resulting in over 20% of all food purchases from local businesses and farms. This represents over 16 tons of products used fall semester at Case Western Reserve University. He has instituted used fryer oil recovery for bio-fuels. He has instituted composting projects to reduce our waste stream. He has partnered with local Aquaculture to buy sustainable fish and seafood. He is identifying local microprocessors to recover the bounty of the Ohio harvest to use through out the year. He has conducted educational classes and demonstrations to promote sustainability at CASE. He was instrumental in our Low Carbon Diet day last year - educating and demonstrating to the students, faculty and staff how menu selections have an impact on global warming.

What are the triple bottom line benefits (people, planet, prosperity) of the nominee`s work?
People: The students and staff at CASE have a greater knowledge of buying local, minimizing waste, reuse of products and the affects of menu selection to global warming. Planet: His composting has reduced our waste stream. His low carbon menus reduce global warming. Reuse of oils for bio-fuel reduces our need for imported oil. Prosperity: Reducing in costs for trash hauling. Local spend for foods in Ohio keeps money in our economy, and keeps farms financially secure.

How has the nominee inspired you to implement sustainable business practices?
As a District Manager, I will emulate the systems and procedures Bob has created to 5 other accounts we operate in Ohio.

Our vision and elements of sustainability are featured on our corporate website. Bob has shared his efforts with other Bon Appetit accounts. These activities are well recognized in our industry.

How does the nominee actively participate in the sustainability community? How do they collaborate and share their knowledge with others?
Bob has worked with a variety of farms and other accounts demonstrating what our programs are. He has educated the students at CASE through student committee meetings and demonstrations at CASE, Cleveland Clinic, Shaker Heights middle school and Shaker Heights grammar school.
